Steamed Tilapia

Servings: 4

Ingredients:
1 pound tilapia fillets  
1 tablespoon Chinese black bean paste  
3 tablespoons soy sauce  
¼ cup scallions, chopped  
1 tablespoon peanut oil  
2 cups water, for the pressure cooker  

Directions:
1- In a bowl, mix soy sauce with black bean paste and whisk well.  
2- Add fish, toss and leave aside for 10 minutes.  
3- Set your pressure cooker on sauté mode, add oil, heat it up, add scallions, stir,  cook for a couple of minutes and transfer to a bowl.
4- Clean the pot, add the water, add steamer basket, add fish fillets inside, sprinkle scallions on top, cover cooker and cook on High for 3 minutes.  
5- Divide everything between plates and serve with a side salad.
