Ingredients:
2 eggs
½ pound sausage, ground
1 tablespoon olive oil
A pinch of chili powder
Black pepper to the taste
2 cups water
Directions:
1- Put 1 cup water in your pressure cooker, add the steamer basket, place eggs inside, cover, cook on High for 6 minutes, transfer eggs to a bowl filled with ice water, cool them down and peel them quickly.
2- In a bowl, mix sausage meat with black pepper and chili powder and stir well.
3- Divide sausage meat into 2 pieces, flatten each on a working surface, add eggs in the middle, wrap them in meat and shape 2 meatballs.
4- Set your pressure cooker on Sauté mode, add the oil, heat it up, add scotch eggs,brown them on all sides and transfer to a plate.
5- Clean your pressure cooker, add the rest of the water, add the steamer basket, place eggs inside, cover and cook on High for 6 minutes more.
6- Divide eggs between 2 plates and serve them for breakfast with a tasty side salad.
