Ingredients:
½ cup quinoa
6 ounces coconut milk
2 tablespoons water
Zest and juice from ½ lime
A pinch of salt
1 tablespoon cilantro, chopped
Directions:
1- In your pressure cooker, mix quinoa with coconut milk, water, lime zest and lime juice and salt, stir, cover and cook on High for 1 minute.
2- Leave quinoa aside for 10 minutes, fluff with a fork, divide into 2 bowls, add cilantro and serve.
