Breakfast Cake



Preparation time: 10 minutes
Cooking time: 25 minutes
Servings: 2

Ingredients:
1 cup water  
3 eggs  
2 tablespoons sugar  
1 tablespoon butter, melted  
5 tablespoons ricotta cheese  
5 tablespoons yogurt  
1 teaspoon vanilla extract
½ cup whole wheat flour  
1 teaspoon baking powder  
½ cup berry compote  Cooking spray

Directions:
1- In a bowl, mix eggs with sugar and whisk until it dissolves.  
2- Add ricotta cheese, butter, vanilla and yogurt and whisk well again.  
3- In another bowl, mix baking powder with flour, stir and add this to eggs mix.  
4- Stir well, pour this into a cake pan greased with cooking spray and spread evenly.  
5- Drop spoonfuls of berry compote over cake mix and swirl with a knife.  
6- Add the water to your pressure cooker, add the trivet inside, add cake pan, cover cooker and cook on High for 25 minutes.  
7- Divide cake between 2 plates and serve for breakfast.
